I'm 11 years post op, and I snack as my eating style. I think it's a great way to go, in spite of the '3 meals a day' advice some surgeons give. I believe it's impossible to maintain your blood sugar if you must wait so long between meals. That said, I recommend eating low carb, complex carb, protein-based snacks, and when it's 'meal time', eat a small meal.
Here's my suggestion for a very livable way of eating:
I eat 6 meals/snacks a day.
My parents have done very well getting to their normal weights with a 90 grams of carbs per day diet, and I have followed their lead.
I believe the easy, general WLS 'wisdom' on protein is 74 grams a day. 'Normal' people need less (like 60 grams). The standard multiplier is .8 grams of protein for every 2.2 pounds of weight.
So divide all that by 6 meal/snacks. You get 15 grams of carbs and 12 grams of protein per meal/snack. Try for complex carbs like fresh fruit, beans, brown rice, quinoa, and whole grain breads. Avoid processed foods made with white flour and any kind of sugar. Don't use those kinds of foods as your carbs if you can help it.
Calories do matter. Cutting back calories is the basic principle of weight loss surgery.
The FDA says fat should be 30-35% of your caloric intake. Do some internet research on how many calories a person should consume in order to lose, then maintain weight. Here's a bit of help: http://www.healthyweightforum.org/eng/calculators/calories-required/
Akins is very high fat. A newer concept is Kimkins, which is a low-fat, low-calorie protein-centered diet. It avoids dairy products in general, cheese is high-fat, milk is high-carb. Alcohol is also avoided. I say 'avoided', meaning it's ok once in a while.
